I love everything chocolate and I know you will appreciate these chocolatey gooey choc brownies made from sweet potato and pumpkin! Such an easy way to get veggies into kids they would never know! I have made similar versions of this recipes loads so it's very easy to make!
I made these yesterday and will make more today because we had extra sweet potato and pumpkin we needed to use so I whipped this recipe up for you guys (and for our hungry team haha!) Ingredients:
1.5 cup cooked sweet potato 1 cup salted peanut butter 1/3 cup soya milk 3/4 cup pumpkin puree 1 tsp vanilla extract 1/2 cup buckwheat flour 1/2 cup chocolate 1 1/2 cup raw sugar 2 tsp Baking Powder 1/2 cup cocoa powder 1/4 tsp salt I had pre-cooked pumpkin and sweet potato but you can also use puree from a can or jar too! Pre heat the oven to 180 degrees. Place the soya milk, peanut butter, sweet potato, vanilla extract and pumpkin into a blender and blend until smooth. Pour into a bowl and add remaining ingredients, fold into the mixture. Line a cake tin with baking paper, pour the mixture out and make sure it's evenly distributed. BAKE FOR 25 minutes. If you want it gooey take it out and leave it to stand after 25 minutes. I used peanut butter from @picspeanutbutter@whittakersnz chocolate (50% dark) @alpro soya milk.
